Recipe Ingredients for Hearty Lentil Stew

1 cup red lentils, dry
2 servings brown lentils, dry (1/2 cup)
2 servings split peas, dry (1/2 cup)
15 oz garbanzo beans
2 cups corn
2 cups pinto beans
4 cups tomato soup
4 cups vegetable broth
1 cup zucchini, chopped
1 cup squash, chopped

Recipe Directions for Hearty Lentil Stew

  1. Prepare the lentils and split peas as directed, using vegetable broth instead of water (usually 2 cups of broth to 1 cup of lentils/peas).

  2. After lentils are ready, add the beans, corn, tomato soup, zucchini, and squash.

  3. Season as desired (salt, pepper, garlic, oregano, etc.).

  4. Simmer for 20-30 minutes, or until squash is tender.
