Recipe Ingredients for Hearty Lentil Soup

453 grams lentils, dried (Jack Rabbit)
10 ounces white asparagus, peeled (Reese)
70 grams baby carrots, finely diced (about 10)
200 grams yellow onion, finely diced
29 fluid ounces chicken broth (College Inn)
390 grams smoked ham, diced (from Ham Hock)
1 tablespoon Chipotle Hot Sauce (Tabasco)
1 teaspoon Oregano

Recipe Directions for Hearty Lentil Soup

  1. Shred or finely dice carrots. Finely dice a yellow onion. Dice celery and asparagus, or other pot vegetable that appeal to you.

  2. Place all ingredients in slow cooker and simmer for 6 to 8 hours. Slow cooking results in a hearty broth.

  3. Remove ham hock and remove meat from the bones. Dice the meat into half inch cubes, or smaller. Return the meat to the soup pot and stir.
