Recipe Ingredients for Hearty Lentil Soup

2 celery stalks, thinly sliced
1 medium onion, chopped
1 clove garlic, minced
2 tbls butter
6 cups water
28 ounces diced tomatoes, undrained
3/4 cups lentils
3/4 cups pearl barley
2 tbls chicken bouillon granules
1/2 tsp oregano
1/2 tsp rosemary
1/4 tsp pepper
1 cup swiss cheese, shredded

Recipe Directions for Hearty Lentil Soup

  1. In dutch oven, saute celery, onion and garlic in butter until tender. Add water, tomatoes, lentils, barley, bouillon, oregano, rosemary and pepper. Reduce heat and simmer 40 minutes until lentils and barley are almost tender,

  2. Add carrots, simmer 15 minutes or until lentils, carrots etc are tender. Sprinke each serving with cheese
