Delicious low cal comforting soup.

Recipe Ingredients for Hearty Lentil Soup

1/2 lb lentils
1 med carrot, finely diced
40 g celery, finely diced (1 med stalk)
1/3 med onion, finely diced
14 g bacon bits (2 T)
85 1/2 g Canadian bacon, diced (3 oz or 6 slices)
3 tsp chicken bouillon (Better than Bouillon)
12 c water
1 bay leaf
1/4 t black pepper
1/2 tsp garlic powder

Recipe Directions for Hearty Lentil Soup

  1. Pick through and rinse lentils.

  2. Add all ingredients to med/large pot and bring to a simmer for 45 minutes or so until lentils are tender.

  3. Can also make in crock pot/slow cooker on either low (all day cooking) or high (for faster use).

  4. Remove bay leaf before serving.

  5. I'm not entirely sure how many this will serve, but I guessed 10, depending if you are serving it with a meal or as a meal.

  6. (Sodium levels are higher than what the analyzer states as I could not locate Better Than Bouillon in the database.)
