This is a great soup to make using beef or venison. It filled me up. I used egg noodles, but the reciped called for mini lasagna noodles or rotini.

Recipe Ingredients for Hearty Lasagna Soup

1 pound ground venison
1/4 tsp garlic powder
3 1/2 cups beef broth
14 1/2 oz diced tomatoes, undrained
1/4 tsp dried Italian seasoning, crushed
1 1/2 cups uncooked egg noodles
1/4 cup grated Parmesan cheese

Recipe Directions for Hearty Lasagna Soup

  1. 1. Cook the beef with garlic powder in a 10-inch skillet over medium-high heat until it's well browned, stirring frequently to break up meat. Pour off any fat.

  2. 2. Stir the broth, tomatoes and Italian seasoning into the skillet. Heat to a boil.

  3. 3. Stir in the pasta. Reduce the heat to medium. Cook and stir for 10 minutes or until the pasta is tender but still firm. Stir in the cheese. Serve with additional cheese, if desired.

  4. Makes 4 servings Prep: 5 minutes Cook: 25 minutes
