This is a very filling dish that's' low-calorie and vegetarian.

Recipe Ingredients for Hearty and Healthy Corn Chowder

2 cups red potatoes, diced
1/2 cup celery, diced
1 medium onion, diced
1 large red pepper, chopped
3 cloves garlic, crushed
2 tbsp olive oil
1 cup vegetable broth
1/8 tsp cayenne pepper
1/8 tsp thyme
1/8 tsp sage
14 3/4 oz creamed corn
12 oz evaporated milk
1 tbsp flour

Recipe Directions for Hearty and Healthy Corn Chowder

  1. In large stock pot or dutch oven, saute potatoes, celery, onion and pepper in olive oil on medium heat for five minutes. Add garlic in last few minutes.

  2. Add one cup vegetable broth. Bring to boil, then cover and turn down to a simmer until potatoes are tender. Sprinkle in seasonings.

  3. Add in creamed corn and evaporated milk. Add salt and pepper as desired. Do not let boil, but bring heat up so you can see steam rising from soup. Let flavors mingle and soup thicken. Add flour as necessary to thicken soup (I added 1 tbsp), or milk to thin broth if preferred.

  4. Makes approximately 6 8oz servings.
