Recipe Ingredients for Hearty Four Bean Stew

3 tablespoons olive oil
1 large red onion, diced
4 garlic cloves
3 carrots, chopped
3 stalks celery, chopped
1 tablespoon fresh thyme
15 ounce lima beans
15 ounce kidney beans
15 ounce pinto beans
15 ounce black beans
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons chopped parsley
2 cups water
3 tbsp lime juice

Recipe Directions for Hearty Four Bean Stew

  1. 1. Saute onion and garlic in olive oil in a large pot over medium heat until soft. Add carrots and celery and cook until softened. Add thyme and cook a minute or so.

  2. 2. Add beans (do not drain them), vinegar, honey, mustard, salt, pepper, half of the parsley, and water. Bring to a boil reduce heat to a simmer over low heat and cook, loosely covered, for 2 hours, stirring every 20 minutes or so.

  3. 3. Remove from heat and add lime juice and the rest of the parsley. Serve hot.
