Recipe Ingredients for hearty Fish Chowder

1 cup bottled clam juice
1 cup tomato juice
1 cup water
1/4 cup white wine, dry
2 scallions, sliced thin
1 garlic clove, minced
4 oz fennel bulb or 2 celery ribs, cut into 1/2 inch pieces
1 medium carrot, cut into 1/2 inch dice
4 oz red potato , scrubbed and cut into 1/2 inch dice
1/2 teaspoon fennel seeds
1/4 teaspoon saffron, or paprika
3/4 pound cod or halibut, skinless and boneless, cut into 3/4 inch dice
1 salt and pepper

Recipe Directions for hearty Fish Chowder

  1. in a large saucepan, combine clam juice, tomato juice, water, wine, scallions, fennel, carrot, garlic, potatp, fennel seeds, and saffron. Bring to a boil, reduce heat and simmer, and cook partially covered until fennel, carrot, and potato are tender, 10 to 15 minutes.

  2. Add fish and simmer intil just opaque throughout, 3 to 5 min. Season with salt and pepper.
