Recipe Ingredients for Hearty Egg White Omlette

30 g spinach leaves
35 g sliced mushrooms
40 g red onion
30 g diced red bell pepper
4 egg whites
1 pinch salt
1 pinch pepper
60 g sliced tomatoes

Recipe Directions for Hearty Egg White Omlette

  1. Line a frying pan with a few sprays of non stick olive oil add mushrooms, onion and bell pepper until almost soft.

  2. Add tomatoes & spinach for 40 seconds until wilted. Set aside.

  3. Place frying pan back over medium-high heat. Coat with olive oil spray.

  4. Whisk egg whites together for about 10 seconds

  5. When the pan is hot, after about 30 seconds, pour in the egg whites. Use a spatula to push the cooked portion toward the centre and allow uncooked portion to run onto the pan.

  6. When the whites are almost cooked, add the spinach and vegetables to one side of the omelet.

  7. Season with salt and pepper.

  8. When the whites are firm, use a spatula to fold the omelet over, turning the side without the vegetables on top of the side with the vegetables. As soon as the egg is cooked, about 30 seconds, you can slide the omelet from the pan.
