This is a run off on the vegetable lentil soup found on website. I altered it a bit. The sofrito that I made was home made so calories taken from website are approx. also I used some homemade turkey broth for 1/2 of the water required which is a guesstimate since I kind of threw this together last night but was quite yummy :)

Recipe Ingredients for Hearty Curry lentil soup

8 oz Lentils
Cabbage, Cooked
Carrots
Onions
Sauce, Sofrito, Prepared From Recipe
thin and trim chicken sausage
Spices Curry Powder
Sea Salt
2 cup, diced Celery

Recipe Directions for Hearty Curry lentil soup

  1. 8oz lentils

  2. 1 onion

  3. 4 stalks celery

  4. head of cabbage (guessing 6 cups)

  5. 4 C water maybe more or less your choice

  6. 4 carrots

  7. 1t salt

  8. 1 T or more of curry powder

  9. 1t more or less of cinnamon

  10. 1/2 C of homemade sofrito (taste so much better than that Goya stuff)

  11. 1 10oz package of Thin & Trim chicken & sausage (I used spinach & red onion flavored)

  12. Boil lentils till soft along with veggies. I did try to keep the cabbage somewhat shredded but this isn't probably necessary. The carrots were chopped small too.

  13. Add chopped sausage and your herbs and seasonings to the pot and let it cook w/ water to your liking. I am quite fond of flavor so I may have added a bit more curry and let it boil down to a thick mixture with less water once finished cooking. Kind of like a stew.
