Recipe Ingredients for Hearty Cranberry Breakfast Bread

1 cup flour
1 cup rolled oats
1/2 cup sugar
2 tsp ground ginger
1/2 tsp ground cloves
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup walnuts
1/4 cup pecan halves
1 cup fresh cranberries
3/4 cup apple juice
1/4 cup walnut oil
1 egg

Recipe Directions for Hearty Cranberry Breakfast Bread

  1. Preheat oven to 350

  2. Generously grease a 5x9x3 loaf pan.

  3. Place the flour, oats, sugar, spices, baking powder, baking soda and salt in a food processor. Pulse until the oats are finely ground.

  4. Add the nuts and pulse until they are just chopped (not too fine).

  5. Remove the flour mixture from food processor and place in a large mixing bowl.

  6. Roughly chop the cranberries and add them to the flour mixture.

  7. In a separate mixing bowl combine the apple juice, oil and egg. Whisk to combine.

  8. Add the wet mixture to the dry mixture and mix until thoroughly incorporated.

  9. Spoon the dough into the greased loaf pan and bake for 50 -60 minutes or until a knife inserted in the loaf comes out clean.

  10. Remove from the oven and let cool before tipping the bread out of the pan.

  11. Slice and serve with good butter and/or marmalade.
