This rich, flavorful, moist snack is low in saturated fat and sodium, and high in selenium. This healthy snack is perfect for breakfast or as an on-the-go snack.

Recipe Ingredients for Hearty Cranberry Biscotti

2 1/2 cups flour
1 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
2 eggs
2 egg whites
3/4 cup sliced almonds

Recipe Directions for Hearty Cranberry Biscotti

Preheat oven to 325. Combine dry ingredients in a medium miking bowl. Whisk together eggs. egg whites in separate bowl. Add to dry ingredients, mixing just until moist, using electric mixer on medium. Add cranberries and almonds; mix thoroughly. On a floured surface divide batter in half and pat each 1/2 into a log approximately 14" long and 1 1/2" wide. Place on cookie sheet and bake 30 minutes. Reduce oven temperature to 300. Cut biscotti into 1/2" piece slices. Stand upright on cookie sheet and bake additional 20 minutes. Let cool and store in a loosely covered container. Makes 2 1/2 dozen.
