This hearty, chunky chilli is great for a snow day, or just a "chilli" day whether it be rainy, windy, first cold day of fall, etc.

Recipe Ingredients for Hearty Chilli

1/2 lb ground turkey
2 large green bell peppers, chopped
1 large vidalia onion, chopped
5 stalks celery, chopped
10 1/2 oz diced tomatoes (1 can)
1 can tomato paste
1 tbsp chilli powder
3/4 cups water
1 lb red kidney beans (soaked over night)
6 oz sliced mushrooms (1 can)

Recipe Directions for Hearty Chilli

  1. Brown ground turkey (or soy crumbles).

  2. Meanwhile, saute green pepper, onion and celery until onion is transluscent.

  3. In a large sauce pan, mix diced tomatoes (not drained), tomato paste, chilli powder, water, beans, mushrooms and aforementioned ingredients. Bring to a boil, then simmer until heated through.

  4. Can garnish with fat-free sour cream and/or cheese.
