A good, thick chili with vegetables

Recipe Ingredients for Hearty chili

1 medium onion, chopped
1 medium green pepper, chopped
1 cup carrots, chopped
8 oz mushrooms, chopped
3 cloves garlic
3 T olive oil
1 pound 90% lean ground beef
12 oz tomato paste
45 oz diced tomatoes with green chilies
15 oz black bean
15 oz white beans
15 oz red kidney beans
15 oz chili beans
64 oz tomato juice
4 T chili powder
1 1/2 t ground cumin
3 t oregano
2 t basil

Recipe Directions for Hearty chili

  1. Saute onions and green peppers until soft.

  2. Steam carrots until slightly soft.

  3. Brown ground beef and break up until Fairly fine texture.

  4. Mix all ingredients except tomato juice in 6 qt crock pot (helps evenly distribute spices & tomato paste).

  5. Mix in tomato juice until desired consistency or crock pot is full.

  6. Cook on low for 6-8 hours.

  7. Serve with shredded cheese, Fritos, macaroni and/or onions for garnishes.
