Recipe Ingredients for Hearty chicken strips and baby spinach soup

1 large onion
3 garlic cloves
1 cup vegetable broth
28 oz plum tomatoes
19 oz can chickpeas
4 cups baby spinach
1 tsp crumbled bay leaf
1 tsp dried thyme
1 tsp dried oregano leaves

Recipe Directions for Hearty chicken strips and baby spinach soup

  1. Chop onion and mince garlic. Coat a large, wide saucepan with oil and set over medium heat. Add onion, garlic and chicken strips. Stir often for about 5 min.

  2. Add broth and tomatoes, including juices. Increase heat to high and bring to a boil. meanwhile, using a fork, break up tomatoes. Rinse and drain chickpeas, then stir in along with seasonings. When it comes to a boil, reduce that to low. cover and simmer, stirring oaccasionally for about 10 min. Discard bay leaves, stir in baby spinach. Sprinkle with Parmesan.
