Recipe Ingredients for Hearty Cabbage Soup

1/2 small yellow onion
2 cloves garlic
1/2 head red cabbage
1 medium carrot
5 large mushrooms
2 large plum tomatoes
4 cups chicken broth
1 teaspoon red wine vinegar
1 teaspoon honey

Recipe Directions for Hearty Cabbage Soup

  1. Mince onion and garlic; saute over medium heat in medium sauce pan 2 minutes stirring constantly.

  2. Add 1/6 cup of the broth to sauteed mixture, cover and cook 5 minutes, stirring occasionally.

  3. Core and shred cabbage; thinly slice carrot and mushrooms; chop tomatoes. Add cabbage, broth, carrot, mushrooms, and tomatoes to mixture.

  4. Bring to a boil over moderate heat. Reduce heat to low and simmer the mixture 30 minutes.

  5. Add vinegar and honey and cook an additional 5 minutes.

  6. Serve with yogurt and black bread!
