Using lower fat turkey sausage saves fat in this recipe, but retains all the flavor.

Recipe Ingredients for Hearty Breakfast Strata

1 pound Turkey Breakfast Sausage
1/2 cup onions, chopped
1/2 cup green pepper, chopped
1 tsp black pepper
10 ounces whole wheat bread
6 eggs
1/3 cup egg whites
1/3 cup original egg beaters
1 cup 1% milk
1/4 cup half and half
1/2 tsp salt
4 ounces part skim mozzarella cheese, shredded

Recipe Directions for Hearty Breakfast Strata

  1. In skillet or in microwave, brown and crumble turkey sausage. Part way through cooking, add the onions, peppers, and black pepper. Cook until sausage is fully done. Break it up into small pieces.

  2. Spray a large baking dish with non-stick spray or wipe with oil. Preheat oven to 350 F.

  3. Cut bread slices into small cubes and spread evenly in dish. Arrange cooked sausage over bread cubes. Sprinkle with the cheese.

  4. Beat together the eggs, egg whites, egg beaters, milk, half and half, and salt. Pour slowly and evenly over the casserole. With a large spoon, press down on the bread and sausage so that they soak up the liquid. Allow to rest 5 minutes while oven reaches temperature.

  5. Bake 40-50 minutes, until eggs are fully set. Remove and let rest 5 minutes. Cut into 12 equal servings.
