Delicious, healthy breakfast cookie!

Recipe Ingredients for Hearty Breakfast Cookies

1/2 cup margarine
1 cup peanut butter
1 1/3 cups brown sugar
2 teaspoons vanilla
2 eggs
1/3 cup water
1 cup all purpose flour
1 cup wheat flour
2 cups oats
1/2 cup wheat germ
1/2 teaspoons salt
1 teaspoon cinnamon
2 teaspoons baking soda
1 cup dried cranberries
1 cup chocolate chips

Recipe Directions for Hearty Breakfast Cookies

  1. In a large bowl, using an electric mixer, beat together butter, peanut butter, brown sugar and vanilla until creamy. Beat in eggs and water.

  2. Mix together flour, oats wheat germ, salt and cinnamon, and baking soda. Mix into peanut butter mixture. Stir in raisins. Drop by icecream scoopfuls ( I don't make them this big) and place on greased cookie sheet. Flatten slightly.

  3. Bake at 350 degrees for 18-20 minutes. (I do about 15 minutes since I make them smaller) Cool on cookie sheet for 2 minutes, then transfer them to cookie racks.

  4. I make a double batch and freeze them... they hold up well in the freezer! Enjoy!
