This is a heavy bread that is very filling. Freezes well. This recipe produces 2 loaves, 16 slices in each loaf.

Recipe Ingredients for Hearty Bread

3 T dry active yeast
4 c water, warm
1/3 c molasses
2 T oil
1 c rye flour
8 c whole wheat flour
2 T sea salt
1 c dry milk, non-fat
3 T brewer's yeast
1/2 c bulgur wheat
1/2 c yellow corn meal
1/2 c rolled oats
1/2 c sesame seeds
1/2 c sunflower seeds
1/2 c wheat berries
1 c raisins
1 T butter

Recipe Directions for Hearty Bread

  1. Dissolve the dry active yeast in the warm water. Stir in molasses and oil. Stir in enough whole wheat flour to make a batter which can be beaten. Beat 300 strokes or for 10 minutes. This develops the gluten and is very important.

  2. Gradually work in, one at a time, the salt, milk, solids, brewer's yeast, bulgur, corn meal, oats, seasme seeds, sunflower seeds, wheat berries, and raisins. Mix well.

  3. Add enough of the remaining whole wheat flour to make a moderatley stiff dough that just pulls from the sides of the bowl.

  4. Place dough in a clean oiled bowl, cover and let rise until doubled in bulk, about 2 hours. Punch down , turn on to floured board and knead lightly.

  5. Divide dough in half, shape each half into a loaf and place in a well oiled 9x5x3 loaf pan. Butter tops.

  6. Let rise until doubled in bulk.

  7. Preheat oven to 375.

  8. Bake 50 minutes or until loaf sounds hollow when tapped on the bottom. Cool on a rack.
