Recipe Ingredients for Hearty Borscht

1 lb lean beef , cut into 1 inch cubes
2 medium carrots, sliced
1 medium onion, cut into chunks
2 cups beets, julienned (2 medium)
1 stalk Celery, sliced
4 cloves garlic, minced
1/2 tsp Black Pepper
2 cups Hot water
2 cups beef broth
1 bay leaf
1 cup beet, shredded (1 medium)
1 1/2 tsp Sugar
1 tbsp Cider vinegar
6 cups cabbage, cut into 1 inch cubes (about 1 lb)

Recipe Directions for Hearty Borscht

  1. In a large Dutch oven combine beef, carrots, onion, celery, julienned beets, salt, pepper and garlic.

  2. Dissolve beef soup base in 2 cups of hot water to make beef broth and add to Dutch oven along with the remaining 2 cups of hot water. Add bay leaf and stir to mix ingredients.

  3. Bring to a boil over high heat, reduce heat to medium low (2-3), cover and simmer for 2 hours.

  4. Add shredded beet and sugar and simmer for a further 30 minutes.

  5. Remove from heat, discard bay leaf and allow soup to cool. Skim off any fat that may gather on the surface.

  6. About 30 minutes prior to serving, bring soup to boil over medium high heat, add cabbage and cook for 15 minutes or until cabbage is done.

  7. Stir in vinegar and serve.
