Hearty Black Bean Soup from Crock-Pot

Recipe Ingredients for Hearty Black Bean Soup

1 pound black beans, soaked overnight and drained
2 tablespoons vegetable oil
1 large yellow onion, finely chopped
2 cloves garlic, minced
2 tablespoons fresh cilantro or Italian parsley, minced
2 quarts chicken or vegetable broth

Recipe Directions for Hearty Black Bean Soup

  1. Combine all ingredients, except the cheese, in the Crock-PotŪ slow cooker.

  2. Cover; cook on High 2 hours, then on Low 8-10 hours.

  3. To assemble, sprinkle the cheese evenly in eight individual bowls and pour the soup over the cheese.
