Recipe Ingredients for Hearty Beanand Vegetable Stew

1/4 lb black beans
1/4 lb red kidney beans
1/4 lb lentils
1/4 lb green split peas
1/3 cup soy sauce
1/2 cup apple juice
1 cup water
1/2 cup diced celery
1/2 cup diced carrots
1/2 cup diced parsnips
1 medium onion diced
1 tsp basil
1 tsp parsley
1 tsp Garlic Powder
1 tsp Bay Leaf
1 tsp black pepper
1 cup cooked rice

Recipe Directions for Hearty Beanand Vegetable Stew

  1. Soak beans overnight

  2. In a pot add beans,, vegetable juice, soy sauce, and apple juice. Cover with vegatable stock or water to desired thickness.

  3. Cook for several hours on high.

  4. Add vegetables, herbs and spices and cook for several more hours until the carrots and parsnips are tender.

  5. Add cooked rice or pasta.
