Recipe Ingredients for Hearty Bean and Vegetable Chowder

4 cups low sodium chicken broth
1 cup onion, coarsely chopped
1 cup celery, coarsely chopped
1 cup carrot, coarsely chopped
1 cup rutabaga, coarsely chopped
12 oz. baby lima beans, frozen
2 cups frozen corn or canned
28 oz. tomatoes, canned, no salt added, chopped
19 oz. red kidney beans
1/4 tsp pepper
1 dash salt, to taste

Recipe Directions for Hearty Bean and Vegetable Chowder

  1. In a saucepan, combine stock and vegetables. (Add a bay leaf for flavour, if you have it.) Bring to boil, reduce heat and simmer, covered, for about 12 minutes or until vegetables are done.

  2. Add lima beans, corn and tomatoes. Cook 5 minutes longer.

  3. Stir in kidney beans and pepper. Simmer, stirring occasionally, for 15 minutes.

  4. Season with salt to taste.
