Recipe Ingredients for Hearty Bean and Barley with Salsa Salad

1/2 cup kidney beans
1/2 cup barley, pearled, cooked
1/2 cup diced celery
2 tablespoons chunky salsa
1 tablespoon olive oil
2 tablespoons chopped walnuts
1 tablespoon balsamic vinegar

Recipe Directions for Hearty Bean and Barley with Salsa Salad

Add all of the above ingredients to a bowl, stir well. Makes 1 main meal for vegetarian entree, or two servings as a side dish. Additional vegetables can be added as desired to lessen the calories. (carrots, corn, peas, any color bell peppers, cucumbers, and black olives are family favorites).
