Hearty, nutty, and substantial, this is a great recipe for using up bananas. Serve at a brunch to really impress your friends and family!

Recipe Ingredients for Hearty Banana Bread

1/2 cup butter
3 eggs
2 bananas
1 1/2 cup carrot
1 3/4 cup flour
1 cup sugar
1/2 cup pecans
1/2 cup pumpkin seeds
1 tsp baking soda
1/4 tsp salt

Recipe Directions for Hearty Banana Bread

  1. Beat melted butter, mashed bananas and eggs together

  2. Add sugar, grated carrots, seeds, nuts baking soda and 1/4 tsp salt. Add flour and stir until just combined

  3. Pour batter into a prepared bread pan (greased). Bake for 1 hour at 350 C or until a toothpick inserted comes out clean.

  4. Especially nice grilled with butter if it gets older then 2 days!!!
