Recipe Ingredients for Heart Healthy Sweet Potato Casserole

6 sweet potato
1/4 c skim milk (or butter milk)
2 tbsp Splenda
2 tbsp Canola Oil
1/2 tsp salt
1/2 tsp cinnamon
3/4 c chopped dates
3/4 c quick oats
1/4 c flour
1/4 c packed brown sugar
1/4 tsp cinnamon
1/8 tsp ground ginger
1/8 tsp salt
1 dash ground nutmeg
1/2 c chopped almonds

Recipe Directions for Heart Healthy Sweet Potato Casserole

  1. Preheat oven to 350F

  2. Peel & cut sweet potatoes. Boil until mashable. With hand mixer, puree sweet potatoes until smooth. Mix in milk, oil, salt, and cinnamon to sweet potato puree, and adjust to taste. Spread sweet potato puree evenly into 9x13 (or other casserole size) oven-safe baking dish.

  3. In mixing bowl, combine dates, oats, flour, brown sugar, cinnamon, ground ginger, salt, nutmeg, and almonds...and mix well to make "crumble-like topping". Top sweet potatoes with crumble-like topping.

  4. Bake @350F until topping turns golden brown, and internal temperature reaches minimum 160F.

  5. You may add real-butter to crumble topping, but consider that this will increase saturated fat content of recipe.
