This is a low fat, high protein & fiber mexican meal...with vegetables mixed right in. You can call this a complete meal, but this may mean a beano night.

Recipe Ingredients for Heart Healthy Poorman's Chili

16 oz whole wheat pasta
46 oz vegetable juice
31 oz red kidney beans
1 1/5 lb ground turkey
14 1/2 oz diced tomato
1 1/4 oz chili seasoning

Recipe Directions for Heart Healthy Poorman's Chili

  1. Prepare your whole grain elbow pasta in accordance with the directions (recommend you slightly undercook, they'll soften more in the chili)

  2. Brown the ground turkey with the chili seasoning. Add a little water to ensure the powder is evenly coated over the meat. Use whatever flavoring you like (mild, hot, low sodium).

  3. Drain the noodles and add everything back into a crock pot. You may need to add some water to ensure everything is covered. Don't worry, it will cook down as the extra moisture is absorbed into the noodles and kidney beans. Add diced or stewed tomatos as desired.

  4. Put the crock pot on low if you have several hours or hotter for less if you're in a hurry.
