Recipe Ingredients for Heart Healthy Collards

2 lbs chopped collards
3 1/4 c chicken broth, low sodium, fat free
1 c water
3 tbs olive oil
1 small chopped onion
3 cloves garlic
1/4 cup chopped green onions
1/2 c chopped ham steak

Recipe Directions for Heart Healthy Collards

  1. Clean and wash greens; dry well; chop and set aside.

  2. In a large pot, bring olive oil, chicken broth, and water to a boil.

  3. Add chopped onions and garlic; return to boil.

  4. Stir in chopped ham; as liquids begin to boil again, add greens until all are in the pot.

  5. Cover pot and simmer for 45 minutes or until preferred texture is reached.

  6. Serve with long grain brown rice and homemade corn bread/corn muffins.
