Vegan Choc-chip cookies from Veg Times Feb 2009

Recipe Ingredients for Heart-Healthy Chocolate Chip Cookies

2 cups walnuts
3 tbs. canola oil
1 cup light brown sugar
1/2 cup water
2 tsp vanilla extract
1 1/2 cups oat flour
1 tsp baking soda
1/4 tsp ground cinnamon
2 cups rolled oats
10 1/2 oz vegan chocolate chips

Recipe Directions for Heart-Healthy Chocolate Chip Cookies

  1. Oven 350F

  2. Blend walnuts in food processor until a fine meal. And canola oil, blend 2-3 minutes more until butter consistency.

  3. Whisk brown sugar and 1/2 cup water in small saucepan. Bring to boil. Pour over walnut mixture. Add vanilla. Stir until no lumps remain.

  4. Whisk together oat flour, baking soda, salt, cinnamon. Fold into walnut mixture. Let cool 10 minutes.

  5. Fold in oats, chocolate chips.

  6. Shape 2 into 2 inch balls. Flatten on pan with bottom of a glass dipped in water.

  7. Cook 3 minutes.
