Whole wheat carrot cake made with plenty of flax seed for the Omega-3s, frosted with an avocado "butter cream" frosting

Recipe Ingredients for Heart Healthy Carrot Cake

3 egg whites
2/3 cup sugar
1/4 cup nonfat milk
1/3 cup applesauce
1 teaspoon vanilla extract
2 cups whole wheat flour
1/2 cup ground flax seed
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/4 cup raisins
8 ounce crushed pineapple
3 cup grated carrot
1 avocado
2 tsp lemon juice
1/2 lb powdered sugar

Recipe Directions for Heart Healthy Carrot Cake

  1. Preheat oven to 350 degrees F. Lightly oil and flour 3 layered cake pans. (I used a small, med, and large pan)

  2. Whisk together the egg whites, sugar, milk, applesauce, and vanilla in a small bowl; mix until well blended.

  3. In a large bowl, sift together the whole wheat flour, flax seed, cinnamon, nutmeg, cloves, and baking soda.

  4. Mix the egg into the flour; stir until well blended.

  5. Fold in the raisins, carrot, and pineapple.

  6. Pour batter into the prepared pans.

  7. Bake in preheated oven until a toothpick inserted into the center comes out clean (but not necessarily dry), about 20 minutes. Set aside to cool for 10 to 20 minutes before refrigerating overnight.

  8. Peel and pit the avocado. Place the avocado into the bowl of a stand mixer fitted with the whisk attachment along with the lemon juice and beat until lightened in color, approximately 2 to 3 minutes. Add the powdered sugar a little at a time and beat until smooth. If not using right away, store in the refrigerator.

  9. After frosting cake, refrigerate so that the frosting can finish setting up.
