Recipe Ingredients for Heart-Healthy Apple Coffee Cake

2/3 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 1/2 cups red apples
2 egg whites
3/8 cup granulated sugar
3/8 cup splenda
1/4 cup chopped walnuts
1/4 cup applesauce
1/4 cup packed brown sugar
1 tbsp all-purpose flour
1 tbsp whole wheat flour
1/2 tsp ground cinnamon
1 tbsp margarine
1/4 cup chopped walnuts

Recipe Directions for Heart-Healthy Apple Coffee Cake

  1. Spray baking pan with nonstick coating; set aside. In a small bowl stir together the 2/3 cup all-purpose flour, cup whole wheat flour, baking soda, 1 tsp cinnamon, and salt.

  2. Combine the apples and egg. Stir in the granulated sugar, cup nuts, and applesauce. Add dry mixture; stir. Pour batter into prepared pan.

  3. For topping, stir together the brown sugar, the 1 Tbsp all-purpose flour, 1 Tbsp whole wheat flour, and tsp cinnamon. Cut in the margarine. Stir in cup nuts. Sprinkle topping over batter in pan. Bake in a 350⁰ oven for 30 to 35 minutes or till a wooden toothpick inserted near center comes out clean. Cool in pan 10 minutes. Remove from pan; serve warm. Makes 10 servings.
