Apple-Cinnamon Oat-Bran Muffins from WH mag

Recipe Ingredients for Heart Guards

1/2 c. bran
1 c whole wheat flour
1/4 c ground flaxseed
1 t. baking soda
1/2 t. baking powder
1 t. nutmeg
1 t. cinnamon
1 egg
2 T. Canola oil
1/2 c unsweetened applesauce
1/4 c sugar
1/4 c chopped walnuts

Recipe Directions for Heart Guards

  1. preheat oven to 350.

  2. in a lg. bowl whisk together bran flour, flaxseed, baking soda, powder, cinnamon and nutmeg.

  3. in a separate bowl, whisk together egg and oil until smooth. Add applesauce and sugar. combine mixtures and fold in walnuts.

  4. spoon batter into paper lined muffin cups and bake 22-25 minutes or until tops spring when touched.

  5. Cool on wire rack.
