altered muffin recipe using wholemeal flour and fruit puree fat replacement instead of oil or butter

Recipe Ingredients for healty cranmuffins

2 c whole wheat flour
1 tbsp baking powder
1/2 tsp salt
1/4 tsp ground nutmeg
1/2 tsp ground cinnamon
2 eggs
1 c 2% milk
2/3 c dark brown sugar
1/2 c applesauce
1 tsp vanilla extract
2/3 c dried cranberries

Recipe Directions for healty cranmuffins

  1. preheat oven to 400 F/200 C/180 fan

  2. whisk dry ingredients & berries in a bowl

  3. whisk wet ingredients in another bowl

  4. add dry to wet and fold until just moistened

  5. pour into muffin tray and bake for 20-25 min
