This is supposed to be a version of Olive Garden's Zuppa Toscana. I made it healthier by exchanging bacon for turkey bacon, sausage for turkey sausage, and heavy whipping cream for whole milk.

Recipe Ingredients for Healthy Zuppa Toscana

454 grams Fully Cooked Lean Smoked Turkey Sausage
7 3/10 medium Russet Potato
2 cup, chopped Kale
1 cup Whole Milk
4 cup Chicken Broth
4 cup (8 fl oz) Water
1 cup, chopped Onions
3 cloves Garlic
5 slice Extra Lean Turkey Bacon

Recipe Directions for Healthy Zuppa Toscana

  1. 1 lb Lean Turkey Sausage (spicy if you prefer more heat)

  2. 5-7 slices of turkey bacon

  3. 5 medium russet potatoes

  4. 2 c kale, chopped

  5. 1 c whole milk

  6. 1 qt water

  7. 2 cans of chicken broth

  8. 1/2 large onion

  9. 2-3 cloves of garlic, minced

  10. 2 tsp red pepper flakes

  11. Salt and pepper

  12. Crumble the sausage onto a baking sheet. Bake the sausage in the oven at 300 degrees for about 30 minutes or until no longer pink. Place on paper towels to drain.

  13. Cook the bacon and crumble into small pieces. Slice the potatoes between 1/8" and 1/4". I used the thick setting on my mandoline. Just make the slices about the same size so they cook evenly.

  14. Dice up the onion and mince the garlic.

  15. Throw the potatoes, onion, garlic, chicken broth, and water into a large pot on medium heat until the potatoes are cooked through. Prepare the kale by chopping into bite sized pieces. Add the sausage, bacon, red pepper flakes, and salt and pepper to taste. Simmer for another 10 minutes, stirring occasionally. Turn the heat to low and add in the kale and heavy cream. Let the soup heat through and serve.
