Low Sugar, high fiber Next time try adding Applesauce for part of the oil, using egg substitue, and further reduce the sugar content (maybe three parts splenda and one part sugar)

Recipe Ingredients for Healthy Zucchini Bread

2 cups Shredded Zucchini
2 eggs
3/4 cup Canola Oil
2 cups Splenda No Calorie
1 tsp vanilla
1 cup flour
2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder

Recipe Directions for Healthy Zucchini Bread

  1. Mix together sugars, zucchini, oil, eggs and vanilla.

  2. Mix together dry ingredients.

  3. Combine and pour into two greased loaf pans.

  4. Bake 45 minutes at 325.
