veggies, tofu, whole grain pasta in a white wine sauce

Recipe Ingredients for Healthy Yummy veggie pasta

1 lb tomatoes, chopped
2 ounces tofu
2 ounces asparagus
1 small onion, chopped
1 lb whole wheat pasta
4 tbsp olive oil
1 cup white wine

Recipe Directions for Healthy Yummy veggie pasta

  1. cook onions, garlic (if wanted) over medium heat in about 2 tbsp of olive oil. Chop asparagus and tomatoes to about the same size and cook with 2 more tbsp of olive oil.

  2. cook the whole grain pasta as directed.

  3. When all of the veggies are cooked deglaze with about 1 cup of white wine. let it reduce and become a sauce. if you want you can add a spash of cream or milk.

  4. add the tofu and heat up and toss with pasta
