Recipe Ingredients for healthy whole wheat crepes

3 eggs
2/3 cup fat free milk
1/4 teaspoon salt
1/3 cup whole wheat flour
1 tbs Smart Balance 37% Light Buttery Spread

Recipe Directions for healthy whole wheat crepes

  1. Blend the eggs, milk, butter, and salt in an electric blender or food processor for 15 seconds; sprinkle in the flour and blend until smooth-about 30 seconds. Or take a small bowl, beat the eggs, milk, butter (melted), and salt until well combined-about 20 seconds. Then sift the flour into a medium size bowl or a 2 quart measuring cup, then add the liquid mixture, beating until well combined-about 1 minute.

  2. You can either use this right away or keep refrigerated for one hour with a lose plastic wrap or let it stand at room temperature for a softer batter.

  3. Take a non-stick skillet/frying pan and spray with PAM (you can use butter but I'm using PAM for less calories and fat) Pour two tablespoons of batter into the frying pan and let cook for about a minute until edges are golden brown. Then flip and cook for thirty more seconds. Remove and let cool or serve hot and ready.
