This is great with spiral pasta and makes plenty!

Recipe Ingredients for Healthy Veggie Pasta

1 tbsp olive oil
1 vegetable bouillon cube
1 1/2 cup water
2 stalks celery, sliced
1 large red onion, chopped
3 cloves garlic, diced
6 large tomatoes, chopped
1 red pepper, chopped
8 mushrooms, chopped
2 zucchini, chopped
1 carrot, grated
1 green apple, grated
1 tbsp dried basil
1 tbsp dried thyme
1 tbsp dried oregano
2 tbsp tomato paste, low salt
1 salt and pepper
500 g pasta, wholemeal

Recipe Directions for Healthy Veggie Pasta

  1. Sautee onion and garlic in oil in a pot

  2. Add vegies and apple

  3. Add water and stock cube

  4. Bring to boil

  5. Turn heat down and add rest of ingredients (except pasta)

  6. Cook pasta separately then add sauce.
