Baked Stuffed Bell Peppers...very healthy

Recipe Ingredients for Healthy Vegetarian Stuffed Bell Peppers

5 bell peppers
1 can tomato paste
1 1/2 cups cooked brown rice
1/4 eggplant (cubed)
1/2 onion (diced)
2 tbsp olive oil
1/2 cup black beans
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp chili powder
2 stalks celery (chopped)

Recipe Directions for Healthy Vegetarian Stuffed Bell Peppers

  1. 1. Heat oven to 400F.

  2. 2. Cut the bell peppers in half and take out seeds.

  3. 3. Bake the bell peppers for 20 minutes or until they start to get soft.

  4. 4. While bell peppers are baking, soften the onions in a pan. When they start to look glassy, add the eggplant. Saute until the eggplant starts to get soft.

  5. 5. Add remaining ingredients and mix.

  6. 6. When bell peppers are ready, take out of oven and fill with the combined other ingredients.

  7. 7. Bake for 10 more minutes. Then serve.

  8. 8. Can make ahead of time. They are great when you reheat them, especially 5-7 minutes in the oven.
