Recipe Ingredients for Healthy Vegetable Soup

1 med onions, chopped
1 tbsp garlic
4 oz Carrots
1 cup chopped celery
1 cup Green Beans
3 cups cabbage, shredded
2 cup frozen okra
1 pkg frozen spinach, thawed and drained
1 cup Original
1 cup,+chopped+or+sliced whole tomatoes
32 oz V8 Vegetable Juice
1 cup Water
1/2 tbsp Parsley
1 tbsp Basil
1/2 tsp pepper

Recipe Directions for Healthy Vegetable Soup

  1. Sauté garlic and onions in olive oil in a large pot.

  2. Repeat this process adding one at a time- carrots, celery, green beans, cabbage, okra and spinach.diced tomato and water.

  3. Add can of Rotel and can of Whole tomatoes (break up the whole tomatoes into bite-size pieces as you add them).

  4. Lastly, add the large container of V8 juice and water (only as needed) and the parsley, basil and pepper.

  5. Bring to a boil, then simmer.

  6. Serve with Saltine Crackers or splurge with warm jiffy cornbread muffins!
