Get rid of veggies before they go bad kind of soup. :) So just a hodge podge of flavour for a snowed in kind of day. One serving is two cups worth of soup, so very filling!

Recipe Ingredients for Healthy Vegetable Rice Soup

1 cup chopped asparagus
3/4 cups chopped carrots
1 cup brown rice
2 cups canned tomatoes
1 cup chicken broth
1 cup chopped turnip
4 cups water
10 tbsp beef bouillon
1 small onion chopped
1 cup chopped broccoli
1 tsp sea salt

Recipe Directions for Healthy Vegetable Rice Soup

  1. Chop all vegetables.

  2. Add all ingrediants to pot.

  3. Bring to boil then turn to low and let simmer for 30 - 40 minutes (until turnip is cooked through).
