Recipe Ingredients for Healthy Vegetable frittata/omlette

2/3 cup skim milk
1/4 cup cheddar cheese
3 eggs
1/3 cup pumpkin
1 medium potato
1 onion
1/4 cup zucchini
1 medium carrot
1 clove of garlic
50 g green beans
1/3 cup of corn
7 cherry tomatoes
1 t olive oil

Recipe Directions for Healthy Vegetable frittata/omlette

  1. chop up vegies

  2. boil potato and pumpkin for few mins

  3. sautee vegies in fry pan with olive oil for 3-4 minutes (not including tomatoes and corn), add potato and pumpkin into fry pan after a couple for minutes.

  4. while thats happening, wisk eggs, milk, cheese and any herbs you want together in a bowl.

  5. once vegies are cooked stir them into egg mixture in the bowl along with tomatoes and corn (Everything).

  6. then get a cooking dish (quite deep) and plop everything in there, spread evenly.

  7. put in oven at 180 degrees celcius for around 15-20 minutes, use your own judgement, should be golden brown on top.

  8. eat it!
