Healthy spin on Giada's Giada De Laurentiis' Turkey Meatballs recipe (Food Network).

Recipe Ingredients for Healthy Turkey Meatballs

1 small onion
3 garlic cloves, minced
1/4 cup egg beater
3 teaspoons wheat germ
1/4 cup chopped parsley leaves
3 teaspoons fat free Parmesan, grated
1 teaspoon salt
1 1/5 pound lean ground turkey
2 teaspoons olive oil
2 1/2 cups diced tomatoes

Recipe Directions for Healthy Turkey Meatballs

  1. 1. Add the onion, garlic, egg beater, wheat germ, 3 tablespoons tomatoes, parsley, Parmesan,salt (pepper to taste) in a large bowl and blend. Mix in the turkey. Shape the turkey mixture into meatballs. Place on a large plate or baking sheet.

  2. 2. Heat the oil in a heavy large frying pan over medium-high heat. Add the meatballs and saute until browned on all sides, about 5 minutes. Turn off heat. Transfer the meatballs to a plate. Pour off any excess oil. Add the rest of the diced tomatoes. Return all the meatballs to the pan. Turn the heat to medium-low and simmer until the tomatoes thicken slightly and the flavors blend, 15 to 20 minutes. Season the sauce, to taste, with salt and pepper.
