My version of stuffed peppers, cauliflower 'rice' significantly cuts down calories, making each pepper just under 200 calories each!

Recipe Ingredients for Healthy stuffed peppers

2 green peppers
2 cups cauliflower
1 cups chicken
1 cup chopped tomato
1 tbsp cheddar cheese
1/2 tbsp olive oil

Recipe Directions for Healthy stuffed peppers

  1. preheat oven to 350

  2. roughly chop cauliflower and put in processor/blender/coffee grinder and pulse until it resembles rice. do not over process.

  3. heat olive oil in pan and cook chicken with salt and pepper + any other desired spices

  4. once chicken is nearly done add the cauliflower and tomatoes.

  5. meanwhile chop the top of peppers off and clean out seeds.

  6. remove chicken cauliflower mixture from heat and fill peppers.

  7. put peppers in over and bake for 15 minutes until soft, add 1/2 tbsp cheese to each pepper and put back into oven until cheese is melty

  8. serve and enjoy!
