This version has tons of veggies and very little oil. Delicious.

Recipe Ingredients for Healthy Singapore Style Noodles

7 oz tofu (half a block)
8 large shrimp cut in half
1 tbsp lite soy sauce
2 tbsp rice vinegar
2 packet Stevia
1/2 tbsp Sriracha
1/2 tbsp chili oil
1/2 cup low sodium chicken stock
8 oz uncooked rice noodle
1 tsp fish sauce
2 tbsp curry powder
1 tsp garam masala
1/2 large onion
8 oz gai lan (half bunch)
1 cup shredded carrot
1 cup bean sprout
1 1/2 cup Shiitake Mushrooms
3 pieces Thai bird chili peppers
2 cloves garlic, grated
1 tbsp ginger, grated
1/4 cup cilantro, chopped
2 scallion, sliced
2 tbsp lime juice

Recipe Directions for Healthy Singapore Style Noodles

  1. Press liquid out of tofu.

  2. Mix soy, vinegar, sugar sub, sriracha, oil and stock. Marinate sliced tofu and shrimp in separate bowls, using a small amount of marinade for shrimp.

  3. Boil rice noodle, cool and sprinkle w/ fish sauce and curry.

  4. Preheat oven to 425.

  5. Roast slices of tofu sprinkled w curry on sheet pan for 15 minutes on each side, reserve liquid

  6. Roast shrimp sprinkled w curry in small oven.

  7. Heat dutch oven with spray of oil.

  8. Add onion, cook until soft.

  9. Add gai lan, carrot, sprouts and shiitake. Add some of reserved marinade, peppers, garlic, ginger and curry. Place lid on pot and let steam.

  10. Add noodles, shrimp and tofu. Gently toss.

  11. Garnish with squeeze of lime, scallion and cilantro.
