Recipe Ingredients for Healthy Shepherds Pie

1 lb ground white turkey
1 small onion, minced
12 oz mixed vegetables
6 small potatoes, peeled and diced
2 cloves garlic, minced
1/2 cup chicken broth
1/3 cup ketchup
2 tbsp flour
2 tbsp light butter
1/4 cup skim milk

Recipe Directions for Healthy Shepherds Pie

  1. Add a small amount of olive oil or butter to a skillet and add minced onions and cook for approx 2 minutes.

  2. Add the ground turkey and brown.

  3. Drain the meat and put back in the skillet.

  4. While turkey is browning, boil potatoes and garlic until potatoes are cooked through. Drain them and mash them with butter and milk.

  5. Add ketchup, flour and veggies to meat mixture and heat through.

  6. In a 8X8 square dish, put the meat and veggie mixture on the bottom of the dish. Top with Mashed potatoes.

  7. You can add cheese to the top if you wish.

  8. Put in 375 degree oven and cook for 20-25 minutes or until top is crusty.
