Recipe Ingredients for Healthy Scones

3 cups flour
1/2 cup sugar
1 tbs baking powder
1/4 tsp. baking soda
1 tbs orange zest
1/3 cup canola oil
1 cup nonfat buttermilk
3/4 cup craisins

Recipe Directions for Healthy Scones

  1. Pre heat oven to 400 degrees.

  2. Mix together the first 5 ingredients (everything that's dry). Note, the Orange zest tastes best right off a fresh orange. Also, it can be replaced with lemon zest and the craisins can be replaced with blueberries for different flavors.

  3. Make sure that all the dry ingredients are well mixed, then stir in the craisens, the buttermilk and the oil. The mix should resemble dry cookie dough or bread dough (similar to biscuits). Stir it only until the mixture gets to this texture; WARNING: if you stir it for too long, the scones get tough, and no one wants to eat tough scones, so only stir it until it gets to this consistency.

  4. Grease two cookie pans with PAM or something like it (if you?re really desperate, use canola oil or butter) and take a SMALL(ish) handful of the dough (after making sure that there?s no unmixed flour on the bottom of the bowel) and make it resemble a ball, about two to three times the size of the size of a ball of dough used to make a chocolate chip cookie, and put it onto the pan. Repeat, keeping about 3 or so inches between each scone. When the sheet(s) are full, put the pan(s) into the oven and bake for 13-18 min. Check after 13 min. They shouldn?t be soft on the inside, and the bottom of the scone should be a dark brown color, similar to MILK chocolate. Then let them cool, and if you want, make a glaze out of the orange/lemon and drizzle it over the scones while they are still warm.
