Recipe Ingredients for Healthy Rhubarb Muffins

55 3/10 grams Apple Sauce Unsweetened Organics
1 serving Liberte 0% Greek Yogourt
1 large Egg, Whole
9 tsp packed Sugars, Brown
0.25 cup Sugars, Granulated
1 cup Whole Wheat Flour
0.5 cup Oats, Regular And Quick And Instant, Unenriched, Dry
1.2 cup, diced Rhubarb

Recipe Directions for Healthy Rhubarb Muffins

Preheat oven to 375. Beat together sugars with egg. Add applesauce, yogurt, and vanilla if desired and mix. In a separate bowl, mix flour and oats with 1.5 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt. Add dry to wet ingredients, mixing until just combined. Stir in rhubarb and spoon into greased muffin pan. Bake for 15-20 minutes, or until toothpick inserted comes out clean.
