Recipe Ingredients for Healthy Raspberry Chocolate Pie

190 g Wheat bran
25 grams Pecans
20 grams Shredded Coconut, Unsweetened
15 grams Coconut Oil of Life, Organic Extra Virgin Oil
1 packets Sweetener Calorie-Free
1/4 tsp Salt, Table
28 grams Apple Sauce Unsweetened Organics
1/4 tsp Cinnamon, Ground
0.13 tsp Ginger, Ground
150 grams Avocados
500 grams Alpro Soya Yogurt, Naturel
65 grams Unsweetened Cocoa Powder (Rexim)
50 grams Water
1 packets Sweetener Calorie-Free
1/2 tsp Salt, Table
0.13 tsp Cinnamon, Ground
0.13 tsp Vanilla Extract
500 grams Raspberries

Recipe Directions for Healthy Raspberry Chocolate Pie

  1. For the crust

  2. Preheat oven to 375F.

  3. Add all the ingredients (graham flour to ground ginger) to a large mixing bowl and mix with a fork until well combined.

  4. Transfer to a removable bottom pie dish and press firmly to the bottom and sides of the pan to form a crust.

  5. Bake in the oven for 10 minutes or until golden.

  6. Set aside to cool.

  7. For the filling:

  8. Add all the ingredients (avocado to vanilla extract) to the bowl of your food processor and process until smooth and creamy, about one minute. Add more water if nedded.

  9. Transfer to the reserved and cooled pie crust.

  10. Assembly:

  11. Arrange the raspberries as tight as you possibly can on top of the chocolate custard, starting in the middle and working your way towards the outside of the pie, working in circles.

  12. When the pie is entirely covered, put it in the refrigerator to set for at least two hours.

  13. To make the chocolate drizzle, add the cocoa powder, melted coconut oil and honey to a small mixing bowl, and mix delicately with a whisk or fork, until smooth. Alternately, you could use melted high quality extra dark chocolate, such as Lindt Excellence 85% Cocoa)

  14. Drizzle over pie. You could also drizzle a little bit of liquid honey, if you so desired.

  15. Serve immediately and garnish with a dollop of yogurt and mint leaf.
