A lower-fat version of the original Healthy Pumpkin Pie. Only the crust is baked.

Recipe Ingredients for Healthy Pumpkin Pie (reduced-calorie)

100 g coconut flour
1/4 c ground flaxseed
1 tbsp coconut oil
1 egg
1 1/2 c canned pumpkin
1 scoop whey protein
1/4 c ground flaxseed (chia seed)
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp allspice
1/8 tsp nutmeg

Recipe Directions for Healthy Pumpkin Pie (reduced-calorie)

  1. Mix coconut flour, 1/4 c flaxseed, egg and coconut oil well. Press into a 9" pie pan. Preheat oven to 350.

  2. Prick holes in the bottom of the crust with a fork. Bake 14-15 minutes or until dry to the touch. Allow to cool completely.

  3. Blend all remaining ingredients. Pour into pie crust, cover and chill overnight until well-set.
